I wasn't really paying any attention to the last 5 minutes of Home and Away tonight because I was too busy cooking dinner. I made chickpea enchiladas and they were delicious! Here is my recipe:
1 onion, diced
1 t/s crushed garlic
1 t/s sweet paprika
1 t/s hot paprika
1 t/s cumin powder
2 small, sweet red chilli (or half a t/s chilli powder)
Salt and pepper
2 t/s tomato paste
1 can tomatos
1 can chickpeas
1 can corn
Lettuce
Grated cheese
Fresh coriander
Any other fillings you want
Enchilada breads
Lightly fry onions and garlic for a few minutes. Add spices and chilli then after a couple of minutes add tomato paste. Then add the canned tomato with enough water to rinse out the tin (half a cm), bring to the boil and add chickpeas and corn. Simmer for at least 10 minutes to give the flavours time to come together. Season to taste.
Serve with warm enchilada breads and whatever fillings you like.
